The Original JE Muffin
From Whole Wheat to Almond Flour

Forensic analysis reveals two distinct formulations. The J.E.E. "Operating Manual" contained the original whole wheat recipe. Later communications show a shift to almond flour — the version that became infamous.

  • Whole milk (organic)4 cups

  • Whole flax seed½ cup
  • Baking soda5 tsp

  • Raisins1 cup
  • Vanilla extract1 tsp

Topping Mix

  • • Pecans (equal parts)
  • • Walnuts (equal parts)
  • • Sliced almonds (equal parts)
  • • Whole flaxseed (equal parts)
  • • Flaxseed meal (equal parts)
Note: Operating Manual specified "NO SUGAR" in topping mix. All eggs and milk must be organic.

Topping Mix

  • • Pecans (equal parts)

Key Change: Whole wheat flour replaced with almond flour. This is the version shared with associates and praised in the "Ode to the Muffin."

Assembly Protocol

From the J.E.E. Operating Manual — applies to both versions

Preparation

  1. Preheat oven to 350°F (177°C). Grease muffin tin with Pam Spray.
  2. In a large bowl, combine bran, flour, flax seeds, baking soda, and salt.
  3. Beat eggs and dark brown sugar in electric mixer until thick and creamy.
  4. Add olive oil to egg/sugar mixture, mix to combine.
  5. Combine whole milk and vanilla, set aside.
  6. Add flour and milk mixture to egg mixture, alternating additions. Do NOT over beat.
  7. Add raisins and stir until incorporated.
  8. Pour into airtight container and refrigerate for 24 hours before using.

Baking

  1. Fill muffin tins to the top with mixture.
  2. Add topping mixture generously.
  3. Bake at 350°F for 35-45 minutes.
  4. Raw mixture keeps in refrigerator for 30 days.

Yield

Full recipe yields approximately 24 large muffins. Quarter the recipe for a standard batch of 6.
